For this recipe, you will need to be ready with the following ingredients:
• 2 ¼ cups of some all purpose flour
• 1 1/3 cups of sugar
• 3 teaspoons of some baking powder
• ½ teaspoon of salt
• ½ cup of shortening
• 1 cup of milk
• 1 teaspoon of vanilla
• 2 large eggs
Once you have all these things ready, now it is time to follow the directions. First, you have to preheat your oven to 350 degrees and also make sure you like your cupcake pans with some paper liners. Then get the sugar, flour, baking powder and the salt and combine these inside a large mixing bowl. After those have been combines, you add the shortening, the vanilla and then the milk. You beat everything for about 1 minute on medium speed. You must scrape the side of your mixing bowl with a spatula.
After that, you add the 2 eggs and again beat for 1 minute on medium speed. Make sure you scrape the bowl. After that, you go ahead and beat the mixture again for 90 seconds on high speed. After you have made sure that your mixture is well mixed, spoon some batter into your paper liners until they are about 1/32 to 2/3 of the way full. Allow them to bake from 20 to 25 minutes or you can poke the center with a toothpick to check if they are indeed cooked. After your toothpick comes out clean, you take them out of the oven and allow them to cool for 5 minutes before you frost and decorate them as you like.
That recipe was for vanilla cupcakes and if you want chocolates
cupcakes instead, you will want to make some small adjustments to
the recipes above. Add 4 ounces unsweetened baking chocolate, ¾
cup milk instead of 1 cup, 2 cups of sugar, 1 teaspoon of salt instead
of ½, add teaspoon of shortening and ¾ cup of water.
You just then follow the same steps as with the vanilla cupcakes.
