ORANGE RUM CAKEIngredients –
2-1/4 cups cake flour, sifted
3/4 cup sugar
1 tbsp baking powder
1 tsp salt
½ cup oil
6 eggyolks
½ cup orange juice
1 tbsp grated orange rind
6 egg whites
½ tsp cream of tartar
½ cup sugar
Glaze
½ cup butter
¼ cup water
3/4 cup sugar
1/3 cup dark rum
Frosting
1-1/2 cup heavy cream
1/3 cup confectioner sugar
Mandarin orange segments
sliced almonds, toasted
Preheat oven to 325 degrees F. Grease and flour bundt pan.
Sift together flour, sugar, baking powder and salt. Add in oil, eggyolks, orange juice, and grated orange rind. Beat until smooth.
Beat eggwhites with cream of tartar until soft peaks form. Add sugar gradually, continuing to beat. Fold in the eggyolk mixture.
Pour into prepared pan and bake until done, about 45 minutes. Invert and let cool.
Prepare Glaze: Melt butter in a saucepan. Add water and sugar. Let boil until sugar dissolved. Remove from heat. Stir in rum.
Prepare Frosting: Whip heavy cream until stiff. Incorporate the confectioner sugar. Set aside and chill.
Transfer cake to serving platter. Prick with a fork. Drizzle the glaze slowly onto the cake and let the cake absorb it. Frost cake with whipped cream. Garnish with orange segments and sliced almonds.
