Ingredients –
1 large baguette or French bread, cut into ½ inch diagonal
slices, toasted
Tomato topping -
6 ripe plum tomatoes, seeded and diced
1 fresh mozarella ball, diced
2 tbsp extra-virgin olive oil
¼ cup basil leaves, minced
¼ tsp crushed red pepper flakes
1 tablespoon balsamic vinegar
Salt & pepper
2 tbsp extra-virgin olive oil
1 clove of garlic, crushed and minced
Chopped parsley
Preheat oven to 350 F.
To prepare tomato toppings –
In a mixing bowl, combined all ingredients for tomato topping. Toss
lightly and set aside.
Combined remaining 2 tbsp olive oil with the minced garlic. Brush top side of sliced bread with this oil-garlic mixture. Toast lightly in oven for approximately 3 – 5 minutes. Spoon toppings over each piece of toasted bread. Do not overfill. Sprinkle chopped parsley over top of each piece.
